To make these banana bread muffins, spray a 12 cup muffin tin with nonstick cooking spray or use paper muffin liners. Prepare batter as directed, then divide equally between liners. Top each muffin with a few oats. Bake for 18-25 minutes at 350 degrees or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.
