Gluten Free Italian Sausage & Goat Cheese Skillet Lasagna

One pan Italian sausage and goat cheese skillet lasagna made with fresh gluten free pasta, herbed goat cheese, and an Italian sausage tomato sauce. It has all of the flavors you love from a classic lasagna made quick and easy in just one pan!
Ingredients

meat sauce
- 1 pound ground mild or hot pork Italian sausage
- ½ yellow onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 (25 ounce) jar tomato pasta sauce
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh parsley
- ½ teaspoon kosher salt
- freshly ground black pepper
cheese mixture
- 3 ounces herbed goat cheese
- ½ cup ricotta cheese
- ½ cup grated parmesan cheese, lightly packed
- 1 egg
- ¼ teaspoon kosher salt
- freshly ground black pepper
lasagna layers
- fresh gluten free lasagna noodle sheets (I used 6 ounces/6 sheets cut in half)
- 8 ounces fresh mozzarella cheese, sliced ¼ inch thick
- ¼ cup grated parmesan cheese, for topping
garnish
- grated parmesan cheese
- freshly chopped basil
Instructions
step 1
Place a 10 inch cast-iron skillet over medium heat and add the Italian sausage and onion, breaking up the sausage with a wooden spoon as it cooks. Cook until the sausage is no longer pink, about 5 – 7 minutes, then drain the fat. Add the garlic and tomato paste, stir and cook for 1 minute.

Stir in the pasta sauce, basil, parsley, salt, and pepper. Reduce heat to low and simmer, uncovered for 10 to 15 minutes until thickened.

While the meat sauce is cooking, make the cheese mixture. In a medium bowl, combine the goat cheese, ricotta cheese, parmesan cheese, egg, salt, and black pepper. Set aside.

Preheat oven to 400 degrees. When meat sauce has thickened, pour into a large bowl.

To assemble the lasagna, spread 1 cup of the meat sauce over the bottom of the skillet. Add ½ cup of cheese mixture on top of the meat sauce and spread evenly, followed by half of the sliced mozzarella cheese. Top with a layer of lasagna noodles (it’s ok if they overlap slightly, you can also cut them to fit). Next, layer on the remaining cheese mixture, remaining mozzarella cheese, ¾ cup meat sauce, then another layer of lasagna noodles. Top noodles with the remaining meat sauce and ¼ cup grated parmesan cheese.

Bake for 30 minutes or until sauce is bubbling and cheese is melted. Garnish with parmesan cheese and fresh basil. Cool for 10 minutes before serving.
