- overripe banana
- plain Greek yogurt
- eggs
- canola oil
- unsweetened vanilla almond milk
- vanilla extract
- cinnamon
- baking powder
- salt

These healthy Greek yogurt banana waffles are gluten free, packed with protein, and super easy to make. Grab your blender and waffle iron and let’s whip up a batch of these insanely delicious waffles.
Ingredients

- 1 cup unsweetened vanilla almond milk
- 2 tablespoons canola oil
- ½ cup plain nonfat Greek yogurt
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1 medium ripe banana
- 2 cups gluten free 1:1 flour
- 1 tablespoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon fine sea salt
Instructions

Preheat Belgian waffle iron.

In a blender, add all of the ingredients, starting with the liquids first. Blend on high for 20 seconds. Scrape down the sides of the blender with a spatula and blend until batter is well combined and smooth, about another 15 – 30 seconds.

When waffle iron is ready, spray generously with nonstick cooking spray. Pour ½ cup of batter into each waffle square and close the lid. Cook until waffles are golden brown and slightly crisp on the outside.

Repeat with remaining batter, making sure to spray waffle iron generously with nonstick cooking spray before each new batch.

This recipe is one of my favorites. They are easy to make and taste delicious. The waffles have a great texture and they crisp up nicely. I would have taken a picture but I was so excited that I kept on eating. 😁

Waffle batter is much thicker than pancake batter so I am not sure how they would turn out as pancakes. If you do make them, please let me know how they turned out and if you made any changes.
