Not only is this the easiest gluten free artisan bread ever, but it’s also quite possibly the easiest loaf of bread you’ll ever make. Quicker and easier to make than banana bread, I mean come on people! Where has this recipe been all my gluten free life?
Well, in fact, it’s been in a gluten free cookbook that I’ve had for over a year now sitting on a shelf in my pantry. Yes, that’s right, I’ve had this amazing recipe sitting at my fingertips for over a year and never even knew it existed!
I stumbled upon this recipe one day while scrolling through Instagram when Zoe Francois (@zoebakes) started an IG Live. I knew Zoe was the co-author of ‘Gluten Free Artisan Bread in Five Minutes A Day‘ so I joined her live and boy am I glad I did!
Her segment that day was this incredible bread recipe with a few tips and tricks on how to make it with no resting or rise time. Just mix the dough, form it, place it in the oven, and poof! Gluten free artisan bread made from start to finish in less than 90 minutes. I was blown away and had to try it myself!
The first step to making this extraordinary gluten free bread is mixing up your very own gluten free all-purpose flour blend.
What you’ll need to make this Gluten Free All Purpose Flour Blend

- gluten free brown rice flour
- gluten free oat flour
- gluten free tapioca flour
- gluten free potato starch
- xanthan gum
To make the gluten free flour blend simply weigh out each ingredient and whisk well to combine. Thats it!
Once the gluten free all-purpose flour blend has been made, it’s time to make the bread dough.
What you’ll need to make this Gluten Free Artisan Bread

- gluten free all-purpose flour blend
- active dry or quick rise yeast
- kosher salt
- coconut sugar
- egg
- water
To make the dough simply whisk together the dry ingredients, add the wet ingredients, mix until a dough is formed, shape the loaf, and throw it into the oven. That’s it. No proofing, no resting, no rising – just bake!
You don’t even need a stand mixer to make this gluten free artisan bread. It’s made right in a mixing bowl with a wooden spoon. I’m telling you, you’ll never make an easier or more delicious gluten free loaf than this!
Grab your digital kitchen scale, a mixing bowl, wooden spoon, parchment paper, and a dutch oven or cast iron pot with a lid and make this super simple, amazingly delicious gluten free artisan bread!

Gluten Free All-Purpose Flour Blend

Gluten free all-purpose flour blend made with brown rice flour, oat flour, tapioca flour, potato starch, and xanthan gum.
Ingredients

- 340 grams gluten free brown rice flour
- 152 grams gluten free oat flour
- 85 grams gluten free tapioca flour
- 75 grams gluten free potato starch
- 13 grams gluten free xanthan gum
Instructions
step 1
Using a digital kitchen scale, weigh out each ingredient and combine in a large mixing bowl. Mix very, very well with a whisk to make sure xanthan gum is evenly distributed. Store in an airtight container.

Gluten Free Artisan Bread

Ingredients

- 247 grams gluten free all-purpose flour (recipe above)
- ¾ teaspoon active dry or quick rise yeast
- 1 ⅛ teaspoons kosher salt
- 1 ½ teaspoons coconut sugar
- 1 egg + lukewarm water (totaling 213 grams)
Instructions
step 1
In a medium bowl, combine gluten free all-purpose flour, yeast, kosher salt, and coconut sugar. Mix until well combined.
step 2
Place a small bowl onto a digital kitchen scale and tare to zero. Add one egg and enough lukewarm water to total 213 grams. Mix well with a fork.
step 3
Add egg and water mixture to dry ingredients. Stir with a wooden spoon until a dough is formed.
step 4
Sprinkle some gluten free flour onto a piece of parchment paper. Scoop dough out onto the center of the paper. With wet hands, form dough into a round ball. Wet hands again and smooth out the surface of the dough until there are no large cracks present. This may take 1 – 3 times depending on how rough your dough ball is.
step 5
Dust gluten free flour over the dough ball and make a few ½ inch deep slashes over the top with a serrated knife. Place the parchment paper with dough ball into a cold dutch oven or cast iron pot with a tightly fitting lid. Place into a cold oven.
step 6
Set oven temperature to 400 degrees and bake for 75 minutes. Remove from the oven and take off the lid. Carefully remove the bread, holding the corners of the parchment paper, from the dutch oven and place onto a wire rack to cool completely. Let cool for 2 hours before slicing.

Notes
to make vegan: use an egg replacer or just simply omit the egg altogether. Instead, measure out 213 grams of lukewarm water.
to make sugar free: simply omit the sugar. The crust will not brown as much, but the bread will taste exactly the same.
