Even though this granola recipe is not technically a cookie, it tastes just like one. Imagine a crunchy almond butter oatmeal chocolate chip cookie that’s been crumbled up – mmm, is there anything better?
Seeing as this is a granola recipe, I wanted it to be much healthier than an average cookie. I decided it had to be loaded with all the good stuff – old fashioned rolled oats, ground flaxseed, sesame seeds, shredded coconut, nuts, and honey for natural sweetness.
So how is this a cookie granola? The addition of a little coconut oil, almond butter, and a very generous amount of dark chocolate chips take this granola from being just like any other to honestly one of the best granolas EVER!
I recommend making a big batch of this chocolate chip almond butter cookie granola to keep on hand at all times. It’s perfect for breakfast, a healthy snack, dessert, or even by itself.
I love eating this granola on top of vanilla greek yogurt with sliced bananas. It tastes like an indulgent treat, but it’s actually super healthy, protein-packed, and loaded with nutrients. I can never stop eating it, it’s just so good!

The key to making this granola with lots of big clusters is not stirring it after it comes out of the oven. Make sure to let it cool completely without any touching or early snacking. I know, it’s super difficult to wait, but totally worth it!

Ingredients

Dry Ingredients
- 3 cups gluten free old fashioned rolled oats
- ¼ cup gluten free oat flour
- 3 tablespoons ground flaxseed meal
- 2 tablespoons white sesame seeds
- ½ cup unsweetened shredded coconut
- 1 cup sliced almonds
- 1 cup chopped pecans
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher salt
Wet Ingredients
- ⅓ cup virgin coconut oil
- ½ cup raw honey
- ½ cup creamy natural almond butter
- 1 teaspoon pure vanilla extract
Add Ins
- 1 cup dark chocolate chips
Instructions
Step 1
Preheat oven to 300 degrees. Line a large baking sheet with parchment paper.
Step 2
In a large bowl, combine oats, oat flour, flaxseed meal, sesame seeds, shredded coconut, almonds, pecans, cinnamon, and salt. Stir until well combined.
Step 3
In a small saucepan, combine coconut oil, honey, almond butter, and vanilla extract. Place over low heat, stirring frequently until smooth and coconut oil is completely melted. Pour mixture over dry ingredients and mix well until everything is completely coated.
Step 4
Spread the granola evenly on the prepared baking sheet and bake for 20 minutes. After 20 minutes, stir the granola and bake for another 20 to 25 minutes or until granola is just slightly golden brown.
Step 5
Remove granola from the oven and allow to cool completely on the baking sheet so that large clumps stay intact. Do not stir while cooling.
Step 6
Once cooled, add chocolate chips. Transfer to an airtight container.
Notes
To make this vegan: simply replace the honey with maple syrup and use vegan dark chocolate chips.
